Sunshine Baked Egg Dish

Ingredients

1 pound sliced bacon
14 eggs
1 1/3 cups cottage cheese
1 can (8 ounce) crushed pineapple, drained
1 teaspoon vanilla extract

Directions:

Preheat oven to 350 degrees F

In a skillet, cook bacon until crisp; drain and discard all but 2 tablespoons drippings. Crumble bacon and set aside.

In a large bowl, lightly beat eggs; add bacon and drippings, cottage cheese, pineapple and vanilla. Pour into a greased 11 x 7- inch baking dish.

Bake uncovered for 40 to 45 minutes or until knife inserted near center comes out clean. Let stand 5 minutes before cutting.
